Mandorlada was born in 2015 as a small artisan laboratory with a passion for almonds and things done well. After years of studying ancient recipes with ventuali, we have enriched them with the excellence of raw materials, reaching an innovative balance of aromas and textures.
The ancient recipes, in fact, require fidelity in dosing the ingredients, but in the care of the choice of raw materials that give back the sensations linked to
memory.
This is why we at Mandorlada make almond pastes using only Avola pizzute almonds, we process them according to the slow and silent ritual that prevailed in the convents and we carefully select the other ingredients. We use extra-fine cane sugar, very fresh egg whites from extra shelled eggs, honey from Sicilian black bees, Slow Food Presidium and Bourbon vanilla berries from Madagascar. This dedication translates into an excellent, healthy and refined product.
Recognitions
In 2018 Mandorlada participating in the Bellavita Expo in London competes in the ' Bellavita Awards ', the main international competition for Italian agri-food products: with a jury of over 300 judges - including top buyers, importers , head chef and sommelier - Bellavita Awards evaluates the best products presented on a scale from 4 to 10 according to 6 considerations: taste, packagingbranding, history, innovation, eco-sustainability and relevance on the market.
